Zambrero tests bowl format to speed menu rollout

Health-led eating trends push restaurants to simplify menus and streamline kitchens.

Zambrero Pty Ltd. has launched a hero menu item built entirely on existing kitchen systems and supply lines, aiming to expand its Mexican-style offering without adding operational or capital costs for franchisees.

Richard Prout, chief of product and innovation at the Sydney-based Mexican-inspired menu chain, said the main challenge was moving a product from approval to systemwide rollout whilst keeping execution consistent across more than 300 restaurants.

“Creating something delicious, but hard to execute, might be easy for me to be able to serve that up for you right now, but can I do that at scale?” Prout told QSR Media in a Zoom interview. “Can I do that with 100 guests or 500 guests?”

The Nourish Plus bowl was designed around three added ingredients—pickled onions, a crunch mix and kale-based slaw—whilst relying on existing supply chains and kitchen equipment.

More than 3,000 staff were trained through the company’s online platform ahead of launch, allowing stores from King’s Cross to Karratha to prepare the item without changing operations.

Prout said the product targets customers seeking functional, health-focused meals rather than simple dietary substitutions, with ingredients such as black rice, amaranth and vegetable-based slaw.

A GlobalData Plc consumer survey published in January showed 66% of respondents factor perceived health impact into food choices, reflecting rising demand for functional meals.

Prout said the bowl is designed for fast decision-making and dietary flexibility, including vegan and gluten-free options.

Zambrero temporarily removed its Signature Burrito build to make room for the rollout.

He said early performance suggests Nourish Plus could move beyond a limited trial and become a permanent menu item.

The company is also preparing to relaunch its Fat Taco, first introduced as a limited-time offer in 2024, as a core menu product.

“We’ll review what is trending, not just within Australia and not just within the Mexican space, but what is trending globally,” Prout said.

Zambrero plans to reach 500 restaurants by 2030 through expansion in Australia and overseas, including a UK franchise agreement targeting 30 sites.

The chain will continue to prioritise drive-thru formats where possible, alongside strip and kiosk locations depending on site availability.
