Luke's Bánh Mì brings coloured mini sliders to new catering menu

Customers can choose from three catering packages.

Luke's Bánh Mì has launched a permanent catering range across its six Melbourne stores as the chain expands its operations.

The new offering is aimed at offices, meetings, events, and other group occasions and will also be introduced in future store openings.

The catering range includes what the business says are Australia’s first coloured bánh mì bread options, available in both mini sliders and standard-sized bánh mì.

Developed by founder and executive baker Luke Vu, the coloured baguettes use beetroot, kale, and imperfect carrots to create red, green and yellow bread.

According to the company, the concept is based on a Vietnamese baking practice of using surplus fruit and vegetables as natural colouring, whilst also creating another use for produce that may not meet retail standards.

The range also features coloured rice paper rolls made with beetroot, pandan and gac fruit, producing translucent red, green and yellow wrappers.

The rolls are filled with a choice of pork, beef, chicken or vegan options, along with vegetables, micro herbs and edible flowers.

Customers can choose from three main package options.

The Luke’s Mini Box, priced at $85, includes 16 mini bánh mì sliders, each about one-third the size of a standard bánh mì, with up to two filling choices and assorted coloured bread.

The Luke’s Fat Box, priced at $95, contains eight standard-sized bánh mì with up to two filling choices and assorted-coloured bread.

The Luke’s Rice Paper Box, priced at $99, includes either 18 full-sized rice paper rolls or 36 party serves, with up to two filling choices and assorted coloured wrappers.
