Inside Motto Motto’s new breakfast daypart dining concept Motto Mornings

The new concept debuts at Brisbane Domestic Airport.

Quick-service Japanese fast-food restaurant Motto Motto is extending its customer base to capture travellers with the launch of Motto Mornings, its new breakfast daypart dining concept.

In partnership with SSP Group, Motto Motto launched Motto Mornings at Brisbane Domestic Airport. The new concept will also see Motto Motto launch its new breakfast menu. 

QSR Media caught up with Matt Fickling, Chief Operating Officer at Motto Motto, and talked about what’s the story behind this new concept.

QSR Media: How did the franchise partnership with SSP first come up?

Matt: We've been actively seeking partners to support our expansion efforts across QLD and NSW. Through extensive discussions with various potential partners, we identified SSP as the ideal collaborator due to their alignment with our brand vision and shared commitment to quality. 

How does opening a new dining concept at the Brisbane Domestic Airport align with Motto Motto's growth strategy?

Motto Motto has strategically developed three restaurant formats to cater to diverse locations and franchisee preferences: restaurant, kiosk, and food court formats.

 

 

By introducing our dining concept at Brisbane Domestic Airport, we're extending our reach to meet the needs of travellers whilst aligning with our growth strategy to expand into non-traditional sites. Our brand has become a Brisbane favourite, so why shouldn't our guests enjoy a rice bowl or fresh iced tea before they travel interstate!?

Why has Motto Motto decided to enter the breakfast daypart?

Airport locations present unique opportunities with travellers passing through at all hours. Opening at 6 AM, we recognised the demand for quality breakfast options beyond conventional and standard fast food offerings. Our 'Motto Mornings' concept combines Japanese-inspired flavours with familiar breakfast favourites, catering to travellers seeking a more elevated dining experience, or those who prioritise taste.

Could you tell us more about the creation of the Tokyo Roll?

The Tokyo Roll was conceptualised through a fusion of familiar ingredients and Japanese inspiration. Picture a Japanese milk bun filled with premium Aussie bacon, local free-range eggs, and tonkatsu sauce or premium wagyu beef with yuzu hollandaise, offering travellers a flavorful twist on traditional breakfast items like sausage and egg.

 

 

What features can we also expect with the new Motto Motto Mornings concept, from design, operational technology, or menu?

The development of 'Motto Mornings' involved innovative approaches in both culinary creation and operational execution. Our team collaborated closely with suppliers to source quality ingredients and introduced new equipment to ensure consistent, high-quality results. From barista-made coffee to freshly squeezed orange juice, every aspect of the concept, including design and branding, has been meticulously crafted to enhance the guest experience and let our guests know they can now get 'more' with Motto Mornings.

Will you be expanding this concept?

As we continue to identify locations where there's demand for elevated breakfast offerings, we remain open to expanding the 'Motto Mornings' concept. Our focus is on meeting the evolving needs of our guests and providing them with exceptional dining experiences, whether they're travelling or dining locally, up early or up late.

What can we expect from Motto Motto this year?

With our new national menu launching on April 30th, featuring new Japanese classics like gyudon beef and orange-yuzu chicken, we're excited to offer our guests even more delicious options. Additionally, with 15 franchise agreements already in place, we're committed to supporting our franchise partners and expanding our presence in Sydney and Brisbane, bringing the Motto Motto experience to even more locations.
