Mark Koronczyk, founder of Lord of the Fries

QSR Media: What makes you excited about your position?
Mark Koronczyk: It’s exciting building something from scratch! We started in a tiny food van and have since built the brand to have a national presence (which will soon be international very shortly). We’re doing all this while being ethically conscious, which is what excites me the most.
QSR Media: What 3 goals are you focused on?
Koronczyk:
1. Birth: Taking the brand to new places. Bringing in exciting new menu items
2. Maintenance: Maintaining high standards across the network.
3. Destruction: Deconstructing myths around being vegetarian; saving the animals & planet.
QSR Media: What long-term changes are you planning on?
Koronczyk: We’re looking to get more consistency particularly with our fries. Using a fresh potato means we are going to get variations through the year depending on the season so we are working on informing our customers of this, really focussing on our product and why our fries are unique. Our packaging also needs to take the next step. We’ve been working on this for too long but it’s coming soon! Finally, we’re looking to go back to our roots and bring back the van which we started in ’04. It’s been ten years and we’ve been researching getting back on the road. It might be time!!!

QSR Media: What previous positions prepared you for this one and how?
Koronczyk: Everything in life prepared me for this position. I have a degree in Hotel Management and also one in Community Development, which shaped my path in restaurants and also attuned my beliefs on helping the community. This pretty much sums up Lord of the Fries: an ethical restaurant that caters for all while being eco friendly.
