
Burgers by Josh’s Buffalo Fried Chicken Burger
One of Sydney’s most popular burger makers Josh Arthurs from Burgers by Josh shares a mouth-watering Buffalo Fried Chicken Burger recipe taking advantage of the new foodservice exclusive Tabasco Buffalo Style Hot Sauce. Josh creates a buffalo special sauce as well as a delicious crunch coating; check out below how he makes his magic.
The BBJ Buffalo Fried Chicken Burger
METHOD
Chicken Brine Marinade
Chicken breast
Equal parts white vinegar & TABASCO® Original Sauce
- Combine white vinegar and TABASCO® Original Sauce in a bowl
- Add chicken and leave for 24 hours in a refrigerator
Buffalo Special Sauce
500g melted butter
3 cups Buffalo Style TABASCO® Sauce
- Combine 500g melted butter with 3 cups of Buffalo Style TABASCO® Sauce, sit aside until assembling burger
Ranch Dressing
2 cups mayonnaise
½ cup onion powder
Juice of 1 lemon
Pinch of salt and pepper to season
- Mix and sit aside until assembling burger
Buffalo Crunch Coating
1 ½ cups plain flour
½ cup smokey paprika
½ cup garlic powder
½ cup onion powder
½ cup marjoram
½ cup cracked black pepper
Handful of salt
- To create the buffalo coating, mix plain flour, smoky paprika, garlic powder, onion powder, marjoram, pepper and salt into a bowl.
- Dip brined chicken breast into egg wash before covering in buffalo coating. TIP: Press down on chicken breast to push coating into the chicken for extra crunch
- Fry at 180 degrees until cooked through and crisp on outside.
- Dunk and cover in the Buffalo Special Sauce.

Tomato
Fresh Jalapenos
Plus Fried Chicken, Buffalo Special Sauce and Ranch Dressing created in previous steps.
- Place cos lettuce, fresh tomato, jalapenos, fried chicken, buffalo special sauce, and ranch dressing onto a bun.
