A fresh approach to hot food holding

A new generation of food holding for QSRs has arrived in Australia with Merco Max holding cabinets, bringing with it a FRESH approach to hot food holding.

The latest Merco Max models provide QSRs the ability to speed up service times while keeping food fresh and taste like it was just made. 

Quick service restaurants (QSRs) invest in technologies to ensure speed and accuracy of service, get the customers’ nod, and score repeat orders. But no matter how quickly prepared and accurate the order is, customer satisfaction ultimately lies on the food quality.

However, it is a reality that food quality is sometimes compromised in the face of demanding turnaround times and an influx of orders. Merco proves that there is no need for brands to choose between food quality and speed with its MercoMax holding units.

QSRs no longer need to worry about preparing food ahead and holding it until serving time as MercoMax holding units keep food hot, fresh, and ready for easy assembly. Bacon strips that stay crispy? Pancakes that stay fluffy? Chicken nuggets that are crispy on the outside but tender and juicy inside? MercoMax holding units make it possible for these QSR favourites to be served just as how they are fresh off the grill, combi oven or the fryer, even if they were prepared way ahead of the time of order.

How do MercoMax holding units help a QSR serve the highest quality of food? Here are some key features:

Holding technology

MercoMax units have airflow technology with a temperature-controlled cabinet that optimises airflow surrounding the food. This technology produces hot air that keeps the food crispy. These holding units maintain the perfect holding temperature and respond to any temperature fluctuation to keep the food quality. They also use duo heat technology (top and bottom) that delivers heat using the perfect combination of convection and radiant heat, to hold products effectively for longer.

MercoMax units also have moisture control removable tray seals that are easy to install to lock in moisture and maintain optimal humidity for products that need to be kept juicy. On the other hand, these tray seals can also be easily removed to keep fried food crispy.

There is also no need to worry about flavour transfer or contamination since each tray will be properly labeled on the MercoMax unit’s displays, which show a countdown timer to when the food expires. EZ clips hold these trays firmly in place and are easily removed for cleaning.

Exterior and safety

These holding units also have easy-to-clean flush-front timer bars that do not collect food or debris. Timer bars are activated on each one tray, making it easy for the kitchen staff to know what product needs to be released first, thereby allowing better rotation of product and less food waste.

While its functionality is highly focused on keeping the heat inside the machine, MercoMax units have cool touch exterior. It is made with robust stainless steel construction and professional grade components that keep the heat inside.

MercoMax units are available for single or double-sided configurations. Double-sided configurations also come with trays that have handles on both sides, enabling staff from both side to fill or get products from the trays. MercoMax holding units are available in 4, 6, 8, and 12 -tray configurations to suit the needs of different kitchen sizes and designs.

USB programmability

All units of MercoMax come with USB port for manual menu updates, giving users the flexibility to change what they want the unit to hold for that day. Say, if you are not serving chicken nuggets today, you can allot that specific tray for some other product.

Service support

The MercoMax brand prides itself on having the industrys most proactive after-sales services and support team so users can rest assured that assistance is readily available in cases of product malfunction. MercoMax provides one year warranty for both labour and parts. Units are also carecode-enabled, a feature that uses mobile and GPS technology to deliver instant access to the most current information available on your unit.
