Waterman's Lobster Co opens pop-up in Bondi Beach
The brand launched a three-month pop up on Boxing Day at Bondi Beach in the Hall Street’s food hub at the former Mr Moustache site.
Waterman’s owners, Matt Swieboda, Tristan Blair and Nate Hatwell said that the Bondi space will be transformed into a casual, relaxed eatery, with natural, cool blue and grey tones, inspired by the beach.
The Bondi menu will be smaller to that of Potts Point, and will focus on the brand signature Maine and Connecticut style lobster rolls, veggie and seafood rolls, as well as a small selection of sides and salads including oysters and kingfish tartare. All items will be available to takeaway.
The wine list at Bondi will be more affordable and will showcase mainly Australian wines from Great Southern in WA, Adelaide Hills in SA, Tumbaruma in NSW and Yarra Valley in VIC. There’ll also be a strong focus on cocktails including the Ritz Spritz, CC Soda, Line and Sinker and The Old Man & The Sea to name a few.
Swieboda said, "The plan has always been to serve our lobster rolls by the sea – to take them back to their beachside lobster shack roots. Beachgoers can wander in with sandy feet, grab a roll or enjoy a glass of wine and some school prawns, and head back to the sand at lunchtime."
