QSR Media talks to Clovis Young, founder and CEO of Mad Mex, to discuss its newest concept.

QSR Media: How would you describe the brand Cantina de Mad Mex?

Clovis Young: It’s a game changer for the business. Designed for the future to cater for the growing trend towards a quality, casual dining experience with all the edge and fun expected from Mad Mex.

QSR Media: How do you think that Cantina de Mad Mex will affect the Mad Mex brand?

Young: Mad Mex offers the freshness , colour and flavour the brand is known for in a fast service and quality food. Cantina de Mad Mex will be a dining and drinking experience with a typically larger footprint , a dedicated bar all in a relaxed atmosphere. Cantina will always be located within existing or new dining precincts rather than food courts.

QSR Media: How are your customers reacting to it?

Young: The response has been overwhelming and the market has responded accordingly. The “Chatter” on social media is always a good indication of any new store format and we have seen strong patronage.

QSR Media: Tell us a little bit about the journey and what was behind making this strategic decision for the brand?

Young: Cantina de Mad Max was born of a vision and desire to create a great casual dining Mexican experience which could deliver on the fun and good times that customers expect from a Mexican bar and restaurant. The Mexican space has evolved considerably since 2008. As the market is forever changing we have seen increased opportunities from shopping centres and our customers a dining experience in addition to great fresh food. Cantina offers all this and more along with the typical Mad Mex irreverence.
