QSR Media: Could you tell us more about yourself, what you do, and how that falls into the multi-site restaurant industry?
Taylor: A Sydney local, watersports participant, amateur musician, and somewhat a foodie, I certainly enjoy products and experiences from the restaurant industry. As a consultant with Simon-Kucher & Partners, I get to help companies grow their topline results through a range of topics such as pricing and promotions, customer management, menu structure, channel design and other growth initiatives.

A specialist in Restaurants and Retail, I’ve worked with companies across Asia-Pacific to drive profitability and customer footfall. My role is to optimise the revenue equation, taking into account customer and market behaviours to develop practical solutions.

What are some of the industry issues you're thinking about at the moment? What are some developments you're seeing that the industry should take a closer look at?
We’re helping our clients focus on the ‘new normal’. As we return from the peak of the COVID-19 crisis, how will customers behave and what levers can we use to bring restaurants back to success? Beyond COVID, we’re experiencing big shifts in how and where customers buy their food.

As the sales mix shifts more into delivery, businesses need to ensure they balance changing demands with financial performance. Another development are the opportunities surrounding loyalty and the ability to understand and cater to specific customers. Few companies use this lever to its potential, but those who do see improved frequency and spend, reducing reliance on costly, market-wide value based promotions.
