Gelatissimo unveiled their new and improved ‘gelaterias’ that boast the new Galleria Del Gelato and Coppe Gelato sundae bars. The new Galleria Del Gelato provides customers the opportunity to witness the whole process involved in preparing their gelato orders.

Below is a Q&A with Dominic Lopresti, Joint CEO of Gelatissimo.
QSR Media: Why is the visual element of the artisan ice-cream production important to put on show to your customers?
Lopresti: It is about educating our customers on how true artisan gelato is made from scratch.
QSR Media: How will you measure the success of these changes?
Lopresti: We will measure this success through customer feedback and engagement using social media platforms and direct communication with our consumers.
We use a social media monitoring tool called Local Measure that gives us real time information on what our customers are saying about us across all of our locations.
QSR Media: What kind of changes have you had to implement to execute these concepts within your stores?
Lopresti: The Galleria Del Gelato area is an adaptation of our existing cafe format with a redesign making the production area visible through a large glass viewing window.
The production area was also modified to allow efficient access to all equipment and ingredients used in the making process to be seen through the glass viewing window.
In addition we instituted a production training program in our Accademia Del Gelato for our artisan gelato makers.
QSR Media: Tell us more about your new Coppe Gelato sundae bars, and what’s unique about this new product range.
Lopresti: Coppe Gelato Sundaes are served in gelaterias in Italy and now we are bringing this premium gelato eat-in offering to our customers.
This offering is in line with our devotion to product excellence, customer satisfaction and dedication to delivering the authentic Italian experience.
Coppe Gelato Sundaes come in a range of sizes with some large enough to share with friends and family.
And of course all are made with fresh gelato and beautifully presented in glass serving bowls.
QSR Media: How do you think the new product range will fare in the market?
Lopresti: I think it will do well. Coppe Gelato sundaes are wonderful to consume, as this authentic artisan gelato offering is freshly made from scratch right before their eyes.
Gathering with friends and families at our gelaterias is an enjoyable social experience.
I believe the community is calling for such a low cost socially engaging experience and one that will put smiles on their faces.
