French-Vietnamese fast casual brand Le Feu Cuisine set to open Flemington branch

Its current store network is now worth $4 million a year.

Le Feu Cuisine, a French-Vietnamese fast casual brand accredited by Coeliac Australia, is set to open a branch in Flemington next month.

Founded by chef Kevin Nguyen, the Melbourne-based chain currently has three restaurants and one take-away store, with the group now worth $4 million a year despite its initial Aspendale restaurant being forced to close in June 2020. 

Nguyen, who was professionally trained under French-Vietnamese Michelin-starred chef David Thai, has worked across Vietnam, Asia and Australia at casinos, resorts and fine dining restaurants.

Most of Le Feu’s  dishes take ten hours or more to cook including their Signature Sher Wagyu Beef Curry, Signature Lamb ribs, Mongolian Lamb chops, Beef soup, Char grilled lemongrass chicken and Crispy caramelised roast pork, which takes two and a half days to prepare and cook.
