As trends in the food industry come and go, authenticity remains to be most crucial, said Sandhurst Fine Foods CEO Mimmo Lubrano.

Discussing the food format trends in the past year, Lubrano noted food trucks have “grown exponentially” in the UK, whilst the same cannot be said in Australia, particularly in Sydney, where it’s seemingly hard to get around.

A common thread between the two markets, though, is the prevalence of Asian street food offerings in UK food trucks and in Australian pop ups.
