‘Clean is the new healthy': Guzman y Gomez declares food free from preservatives, artificial flavours
The chain’s guidelines are also based on international food guidelines laid out by the World Health Organisation.
Guzman y Gomez (GYG) has announced that its food is now “100% Clean”, containing no added preservatives, artificial flavours, added colours or “unacceptable” additives.
For three years, GYG founder and global CEO Steven Marks and culinary head Cindy Flores worked with an independent nutritionist to create the Mexican chain’s definition of Clean, which was then based on extensive research into additives and preservatives, consumer trends and the international food guidelines laid out by the World Health Organisation.
The company then began the transition to a 100% Clean food menu by teaming up with new and a number of its current suppliers to make changes or create entirely new products to fit within GYG’s guidelines.
In less than 12 months, the chain removed all added preservatives from its tortillas, corn chips and hard tacos, trialing several iterations in-store before transitioning to products with no added preservatives nationwide. The journey also resulted in fries, cheese and even sauces and marinades achieving Clean status.
“Our menu and processes are constantly evolving in response to global best-practice and, most importantly, customer demand. After extensive research into consumer attitudes and trends towards food, and ongoing feedback from our guests, it’s become clear that Clean is the new healthy,” Marks said in an announcement.
